slow cooker Cajun roast beef – This rustic, fragrant recipe for cajun roast beef is also a crockpot recipe. The beef roast is rubbed with southern cajun spice, before being quickly browned, stove top, then slow cooked all day, until fork tender. The best thing about this recipe is you can still enjoy homemade roast beef in the warm weather, without turning on the oven!

Ingredients to make Slow Cooker Cajun Roast Beef

2-1/2 pound boneless beef chuck pot roast
3 teaspoons cajun seasoning
1 tablespoon cooking oil
1 can Cajun style stewed tomatoes
1 cup chopped white onion
1 cup chopped celery
1/4 cup quick-cooking tapioca
1 teaspoon minced garlic

Directions to make Slow Cooker Cajun Roast Beef

Step 1:

Trim fat from roast. Rub Cajun seasoning all over meat. Brown in large skillet using the cooking oil.

Step 2:

In crock pot combine undrained tomatoes, onion, celery, tapioca and garlic. Place roast on top. Cover and cook on low setting for 10 hours
